Phase 1 is officially over and I must say it was a lot easier than I expected. I tried several of the recipes from the book and there are some keepers for sure. Reviews and pictures to come!
so here's the scoop:
I've lost 9 pounds (bye bye, and don't come back!) and I'm happy to report that I have found a long lost friend - my waist :-) yay me!
The fast weight loss is definately motivating and I can't wait to see what phase 2 is going to be like.

Day 2 of Phase 1 is over and I made it! Overall it went okay, I decided to wing it once again and not use the book for recipes but tonight I sat down and looked through some of the sample mealplans for phase 1 and there's some good looking stuff, so stand by for recipe reviews :-)
I'm not a big fan of salad or vegetables (big shock!) so just the thought of having to eat another salad for lunch was making me sick... I really hope I get used to this very soon.
breakfast:
Omelet made from 2 eggs
2 slices of canadian bacon
1 low fat string cheese (chopped up)
dash of freeze dried chives
1 Tbsp Hot Salsa
2 cups of coffee
snack:
1 sugar free Jell-O Chocolate Mousse (OMG, so good!!)
lunch:
basically a copy of last night's dinner without the mushrooms
2 oz smoked salmon
1/2 yellow, 1/2 green squash with Mediterranean Spice
dinner:
mixed salad with
1 low fat string cheese
1/2 Avocado
1 small lean beef patty
snack:
1 sugar free Jell-O Chocolate Mousse (yep, again!)
I didn't feel motivated at all today. I was very tired all morning and had a difficult time functioning. Wonder if this is the first sign of my body really needing some sugar? Was able to pull myself together late in the afternoon and went on a walk for a little more than 1 hour, it was sunny and the fresh air made me feel a lot better. So maybe it is true.... getting up and moving is the key.
The plan is to take a closer look at the recipes to get a bigger variety into my diet.

Watch Mommy get back in shape
I've been trying to lose weight and get into shape for a long time but like so many people can't ever seem to get myself motivated to cook healthy and exercise. It's time to get serious and stop making excuses! I'm ready to feel and look better, I believe this will bring the family together, make me a better wife and mother but most of all - find the real me again (the one I lost along the way while being busy trying to make everyone else happy). Yep, that's the goal - find ME.
I'm going to write down my progress just to keep myself on track.
I have decided to go with the South Beach Diet because I saw it work for my friend and because it is a lifestyle, not just a short term solution. So here is the question: is losing weight on the South Beach Diet really possible?
My plan is to write down what I eat and how I feel every day. I will post before and after weight and measurements at the end of my challenge. So here we go...
Day 1:
Today I woke up not feeling very motivated, still getting over this flu and have a cough. Almost fell into the 'lets stare at Facebook and stay on the couch as long as possible' trap. But this time I didn't. I even got a little bit of exercise in - which is definately better than no exercise! yay me ;-)
20 jumping jacks
20 lunges
20 jumping jacks
10 lunges
breakfast:
2 eggs
1 slice of canadian bacon
handfull of chopped red bell pepper
2 cups of coffee
so far, so good.
snack:
1 low fat string cheese
lunch:
mixed salad greens w/2 Tbsp Johnny's Great Caesar Dressing
1 chicken breast w/Cajun seasoning
snack:
celery w/1 tbsp natural peanut butter
10 almonds
dinner:
2 oz smoked Alaskan Salmon (without brown sugar)
1/2 yellow & 1/2 green squash
6 mushrooms with garlic/pepper seasoning
Today I didn't prepare any of the recipes from my books, it seemed a lot easier to just 'play it by ear'.
I'm feeling okay, not missing the sugar yet (or the wine). Big challenge today: I went to Target and bought Easter Candy for the kids - without digging in!
Day 1 was a success, I feel encouraged and think that this time I will actually go through with it.
